Winter Comforts; Homemade Nutty Granola with Dehydrated Pears

Theres nothing like a good wholesome breakfast to start the day. We share our favourite granola recipe, naturally sweetened with honey with an irresistible peanut butter taste. Make in advance and store to enjoy for the week ahead.

Recipe

Preheat oven to 180°C. Lightly grease a roasting pan and line with baking paper.

Ingredients

  • 3 cups rolled oats (you can also use GF oats)
  • 1/2 cup  natural almonds, coarsely chopped
  • 1/4 cup pepitas (pumpkin seeds)
  • 1/4 cup sunflower seeds
  • 1 tbsp chia seeds
  • 2 tbsp coconut oil, melted
  • 2 tbsp honey
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup smooth peanut butter
  • 1 tsp vanilla extract
  • 1/3 cup shredded coconut
  • Milk, yoghurt and honey to serve

Method

Combine the oats almondwalnut, seeds,  and cinnamon in a large bowl. Place coconut oil, honey, peanut butter and vanilla in a jug and heat breifly in the microwave, mixing until combined. Add to oat mixture in the bowl and stir until well combined.

Spread mixture evenly over prepared pan. Bake, stirring every 5 mins, for 20 mins or until golden, adding shredded coconut for the last 5 mins of cooking. Set aside in the pan to cool completely. Transfer to an airtight container.

Dehydrated Pears

To make the dehydrated pears, wash and dry pears and thinly slice with the skin on, brush with lemon juice to stop them browning and arrange them on the trays of your food dehydrator. If you’re using the oven, place them on parchment lined baking trays or on cooling racks stacked on baking trays. Follow the instructions on your food dehydrator for the temperature and time settings, or set your oven to 160 degrees and place the pears inside. In the oven, your pears will take about 3-6 hours. Check after 3 hours, and then every half-hour until they are the texture you’d like. Take them out and let them cool.

Divide granola among serving bowls. Serve with milk, yoghurt, a drizzle of honey and dehydrated pears, fresh figs or berries and enjoy!
